Ingredients

  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup
  • 3 cups almond flour
  • 1 cup mini chocolate chips

Equipment

  • Mixing Bowl
  • Measuring cups
  • Spatula
  • Cookie Sheet
  • Freezer-friendly container

Method

  1. Begin by melting the coconut oil in a small saucepan over low heat. Once melted, remove it from the heat and allow it to cool slightly.
  2. In a large mixing bowl, combine the melted coconut oil and maple syrup. Stir until well combined and smooth.
  3. Gradually add the almond flour to the wet mixture, stirring continuously until a dough begins to form. You may find that using your hands to knead the dough is helpful at this point.
  4. Once the dough is well combined, gently fold in the mini chocolate chips until evenly distributed.
  5. Using your hands, scoop out small portions of the dough and roll them into balls about 1 inch in diameter. Place them on a cookie sheet lined with parchment paper.
  6. Transfer the cookie sheet to the freezer and let the bites chill for at least 30 minutes to set. This step is essential to help the bites hold their shape.
  7. Once chilled, your Cookie Dough Bites are ready to be enjoyed! Store any leftovers in an airtight container in the freezer.

Notes

  • Store the bites in an airtight container in the freezer for up to 3 months.
  • To thaw, leave them at room temperature for a few minutes, or enjoy them straight from the freezer.
  • For added texture, try rolling them in crushed nuts or coconut flakes before freezing.
