Ingredients
  

  • 12 tablespoons Unsalted butter at room temperature
  • 3/4 cup Light brown sugar firmly packed
  • 1 teaspoon Vanilla extract
  • 1 cup Old-fashioned oats not steel cut or quick oats
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1-1/4 cups All-purpose flour
  • 1 cup Cookie butter such as Biscoff spread
  • 1 cup Milk chocolate chips semi-sweet or dark can also be used

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your baking pan with a bit of butter or line it with parchment paper.
  3. In a large mixing bowl, beat the unsalted butter and light brown sugar together until light and fluffy, about 2-3 minutes.
  4. Mix in the vanilla extract until evenly incorporated.
  5. In a separate bowl, whisk together the oats, baking soda, salt, and flour until well combined.
  6. Gradually add the dry mixture to the butter-sugar mixture, stirring until just combined.
  7. Gently fold in the cookie butter until evenly distributed.
  8. Fold in the milk chocolate chips.
  9. Transfer the batter to your prepared baking pan and spread it evenly.
  10. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  11. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Cut into squares and enjoy!

Notes

  • Store bars in an airtight container at room temperature for up to one week.
  • Refrigerate for longer storage, up to two weeks.
  • Bars can be frozen for up to three months wrapped tightly in plastic wrap.
