Ingredients

For the Marinade:
  • 2 cloves garlic minced
  • 1/2 small onion finely chopped
  • 1 cup strong coffee at room temperature
  • 1 cup soy sauce
  • 1 teaspoon pepper
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 piece flank steak (2-pound)

Equipment

  • Mixing Bowl
  • Whisk
  • Resealable plastic bag or shallow dish
  • Grill or grill pan
  • Meat thermometer

Method

Instructions
  1. Start by gathering all the marinade ingredients. In a mixing bowl, combine the minced garlic, finely chopped onion, strong coffee, soy sauce, pepper, brown sugar, olive oil, rice vinegar, and Worcestershire sauce. Use a whisk to blend everything together until the brown sugar dissolves and the marinade is smooth.
  2. Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish, then refrigerate for at least 2 hours, or ideally overnight.
  3. When you’re ready to cook, preheat your grill or grill pan over medium-high heat.
  4. Remove the flank steak from the marinade, allowing any excess marinade to drip off. Discard the leftover marinade. Place the steak on the grill and cook for about 4 to 6 minutes on each side, or until the internal temperature reaches your desired doneness.
  5. Once cooked, remove the steak from the grill and let it rest for about 5 to 10 minutes. After resting, slice the steak against the grain into thin strips.

Notes

  • For added flavor, consider adding herbs like thyme or rosemary to the marinade.
  • This dish pairs well with grilled vegetables or a fresh salad.
  • Leftover steak can be sliced and used in sandwiches or salads.
