Ingredients
  

  • 1.5 cups sweet sticky rice
  • 1.5 cups water
  • 0.75 cups coconut milk for flavoring rice
  • 3 tablespoons coconut oil
  • 1 pound flank, flat iron, or skirt steak thinly sliced
  • 1 tablespoon Thai seasoning Spice Islands brand recommended
  • 1 unit shallot minced
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger finely grated
  • 1 large head broccoli cut into small florets
  • 1 cup coconut milk for stir fry sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar packed
  • 0.5 tablespoon lime juice for a zesty kick
  • to taste fresh cilantro for topping
  • to taste toasted sesame seeds for garnish

Equipment

  • Wok or Large Skillet

Method
 

  1. Rinse the sweet sticky rice under cold water until the water runs clear. Soak in 1 1/2 cups of water for 30 minutes to an hour. Cook according to rice cooker instructions or boil, then simmer for 15 minutes. Stir in 3/4 cup of coconut milk after cooking.
  2. Toss the thinly sliced beef with Thai seasoning and let marinate for 15-20 minutes.
  3. Heat 3 tablespoons of coconut oil in a large skillet over medium-high heat. Sauté minced shallot, garlic, and ginger for 2-3 minutes until fragrant.
  4. Add the marinated beef to the skillet and cook for 5-7 minutes until browned and cooked through.
  5. Add broccoli florets, 1 cup of coconut milk, soy sauce, brown sugar, and lime juice. Stir and cook for another 5 minutes until broccoli is tender yet crisp.
  6. To serve, place sweet sticky rice in bowls and top with the beef and broccoli mixture. Garnish with fresh cilantro and toasted sesame seeds.
