  • 1 medium banana frozen
  • 1/4 cup apple juice no added sugars
  • 1 tablespoon shredded coconut unsweetened
  • 1 cup milk soy, nut, or dairy
  • 1 cup baby spinach fresh
  • 1 tablespoon fresh ginger minced

Method
 

  1. Step 1: Prepare the quinoa by cooking it according to the package directions and allow it to chill.
  2. Step 2: While the quinoa cools, gather all your other ingredients.
  3. Step 3: In your high-speed blender, add the chilled quinoa, frozen banana slices, apple juice, shredded coconut, milk, packed baby spinach, and minced ginger.
  4. Step 4: Blend on high until smooth, adjusting with more milk if too thick.
  5. Step 5: Taste and adjust sweetness as needed, adding honey or maple syrup if desired.
