  • 1 15-ounce can cannellini beans drained and rinsed
  • 1 clove garlic minced
  • 1/4 cup cilantro fresh
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice freshly squeezed
  • 1/3 cup olive oil high-quality
  • salt and pepper to taste

Method
 

  1. Start by gathering all your ingredients. Drain and rinse the cannellini beans thoroughly under cold water to remove any excess sodium. Chop the cilantro and mince the garlic.
  2. In your food processor, combine the drained cannellini beans, minced garlic, cilantro, lime zest, and lime juice. Pulse until the mixture is roughly combined.
  3. With the processor running, slowly drizzle in the olive oil. Continue processing until the hummus reaches your desired consistency. If it’s too thick, add more olive oil or a splash of water.
  4. Taste your hummus and add salt and pepper as needed. Adjust according to your preference.
  5. Transfer the hummus to a serving bowl, drizzle with a little extra olive oil, and garnish with additional cilantro if desired. Serve with pita chips, fresh veggies, or your favorite crackers.

  • For an ultra-smooth hummus, peel the skins off the cannellini beans before blending.
