Ingredients
  

For the Toffee:
  • 30-40 pieces saltine crackers about 32 used
  • 1 cup unsalted butter or 2 sticks
  • 1 cup brown sugar packed; half light and half dark used
  • 1 teaspoon vanilla extract
  • 1-2 cups semi-sweet chocolate chips one 12-ounce bag used

Method
 

Directions
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Line a baking sheet with parchment paper and arrange the saltine crackers in a single layer.
  3. Step 3: In a medium saucepan over medium heat, melt the butter. Stir in the packed brown sugar and bring to a boil, stirring constantly. Allow to boil for 3 minutes without stirring, then remove from heat and stir in the vanilla extract.
  4. Step 4: Carefully pour the hot toffee mixture over the arranged saltine crackers and spread it evenly with a spatula.
  5. Step 5: Bake for 5 to 7 minutes until bubbly and slightly golden.
  6. Step 6: Remove from the oven and sprinkle the semi-sweet chocolate chips over the hot toffee. Let sit for 5 minutes to soften.
  7. Step 7: Spread the melted chocolate evenly over the toffee.
  8. Step 8: Allow to cool at room temperature for 30 minutes, then refrigerate for another hour to set completely.
  9. Step 9: Once set, break into pieces and enjoy!

Notes

  • Store in an airtight container at room temperature for up to 2 weeks.
  • Freeze for up to 3 months by wrapping well to avoid freezer burn.
  • For a fresh flavor boost, add a sprinkle of salt right before serving.
