Baking Instructions:
- Preheat your oven to 350°F (175°C). This ensures that your bars bake evenly.
- Grease your 9x9 inch baking pan lightly or line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the flour, brown sugar, cocoa powder, sea salt, and baking powder until well combined.
- Add the room temperature butter, vanilla extract, and almond extract to the dry mixture. Using a fork or pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Stir in the rolled oats until evenly distributed throughout the crumb mixture.
- Set aside about 1 cup of the crumb mixture to use as a topping later.
- Press the remaining crumb mixture into the bottom of the prepared baking pan. This will form a solid crust.
- Evenly spread the raspberry jam over the crust, ensuring it reaches the edges.
- Sprinkle the coarsely chopped dark chocolate over the raspberry layer.
- Sprinkle the reserved crumb mixture over the top of the chocolate and raspberry layers.
- Finish by sprinkling the coarse flake salt over the top for a delightful contrast.
