Ingredients
  

For the Crumb Base:
  • 1 cup all-purpose flour
  • ¾ cup brown sugar
  • 3 tablespoons dark or Dutch process cocoa powder sifted
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking powder
  • 10 tablespoons unsalted butter at room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 1 cup rolled oats
For the Filling:
  • ½ cup raspberry jam
  • 1.5 oz dark chocolate coarsely chopped
  • ½ teaspoon coarse flake salt such as Maldon

Method
 

Baking Instructions:
  1. Preheat your oven to 350°F (175°C). This ensures that your bars bake evenly.
  2. Grease your 9x9 inch baking pan lightly or line it with parchment paper for easy removal.
  3. In a large mixing bowl, whisk together the flour, brown sugar, cocoa powder, sea salt, and baking powder until well combined.
  4. Add the room temperature butter, vanilla extract, and almond extract to the dry mixture. Using a fork or pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Stir in the rolled oats until evenly distributed throughout the crumb mixture.
  6. Set aside about 1 cup of the crumb mixture to use as a topping later.
  7. Press the remaining crumb mixture into the bottom of the prepared baking pan. This will form a solid crust.
  8. Evenly spread the raspberry jam over the crust, ensuring it reaches the edges.
  9. Sprinkle the coarsely chopped dark chocolate over the raspberry layer.
  10. Sprinkle the reserved crumb mixture over the top of the chocolate and raspberry layers.
  11. Finish by sprinkling the coarse flake salt over the top for a delightful contrast.
  12. Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is set and slightly golden.
  13. Allow the bars to cool in the pan for at least 15 minutes before lifting them out using the parchment. Once fully cooled, slice into squares and enjoy!
