Ingredients

  • 1 cup butter unsalted
  • 1 cup sugar granulated
  • 2 large eggs
  • ¾ cup dark cocoa powder or regular cocoa powder
  • 2 ½ cups all-purpose flour
  • ½ tsp coarse salt or regular salt
  • 1 tsp baking powder
  • 1 cup peanut butter chips
  • 1 cup chocolate chips

Equipment

  • Mixing bowls
  • Electric mixer
  • Baking Sheets
  • Parchment paper
  • Cookie scoop
  • Cooling rack

Method

  1. Step 1: Preheat your oven to 350°F (175°C) for even baking.
  2. Step 2: In a large mixing bowl, beat together the butter and sugar until light and fluffy, about 3-4 minutes.
  3. Step 3: Add the eggs one at a time, mixing well after each addition.
  4. Step 4: In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add this to the wet ingredients.
  5. Step 5: Fold in the peanut butter chips and chocolate chips until evenly distributed.
  6. Step 6: Using a cookie scoop, drop rounded tablespoons of dough onto a parchment-lined baking sheet.
  7. Step 7: Bake for 10-12 minutes, until the edges are set but centers are soft. They will firm up as they cool.
  8. Step 8: Allow cookies to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Notes

  • Make sure your butter is at room temperature for easier mixing.
  • Do not overmix the dough to keep cookies soft.
  • Store baked cookies in an airtight container for up to a week.
