Ingredients
  

  • 1 tbsp flour of choice or protein powder adds structure and protein
  • 1 1/2 tbsp cocoa powder high-quality for rich flavor
  • 1 cup shredded coconut unsweetened and full fat
  • 1/2 cup milk of choice any type works
  • 1/4 cup pure maple syrup, honey, or agave based on sweetness preference
  • 1/4 tsp pure vanilla extract adds depth of flavor
  • 1/16 tsp salt enhances sweetness

Method
 

  1. Gather all your ingredients on the countertop and preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour or protein powder, cocoa powder, shredded coconut, and salt. Whisk until thoroughly mixed.
  3. In another bowl, whisk together the milk, maple syrup (or honey/agave), and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. A few lumps are fine.
  5. Drop rounded tablespoons of dough onto the cookie sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, until the edges are set and the tops look slightly dry.
  7. Let them cool on the sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • For longer freshness, refrigerate them, but they may become firmer.
  • These cookies freeze well; place them in a single layer to freeze individually.
