Chipotle Hummus

Ingredients
  

  • 15 ounces chickpeas rinsed, drained, and peeled
  • 1 chipotle in adobo pepper
  • 2 teaspoons adobo sauce
  • 1 clove garlic fresh
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 1 tablespoon lime juice
  • 1/2 teaspoon kosher salt
  • olive oil and smoked paprika for garnish

Method
 

  1. Start by rinsing and draining your chickpeas. If you have the time, peeling them will yield a smoother hummus, but it’s completely optional.
  2. In your food processor, combine the rinsed chickpeas, chipotle pepper, adobo sauce, garlic, tahini, olive oil, water, lime juice, and kosher salt.
  3. Secure the lid on your food processor and blend on high speed. Stop occasionally to scrape down the sides to ensure everything is well incorporated.
  4. If your hummus is too thick, add a bit more water, one tablespoon at a time, until you reach your desired consistency.
  5. Give your hummus a taste and adjust seasoning if necessary. If you prefer more heat, you can add an additional chipotle pepper or more adobo sauce.
  6. Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with smoked paprika for a beautiful finish.

  • Use high-quality tahini and olive oil for the best flavor.
  • For a creamier texture, consider using canned chickpeas or cooking your own from dried.
  • Store leftovers in an airtight container in the refrigerator for freshness.
