Ingredients

  • 3 cups cooked chicken shredded
  • 1 cup red grapes halved
  • 1/2 cup celery chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 6-10 inch tortillas
  • Fresh lettuce leaves

Equipment

  • Mixing Bowl
  • Fork or spoon
  • Knife and cutting board
  • Measuring cups and spoons
  • Wrap or sandwich paper

Method

  1. Step 1: Prepare the Chicken - If you haven't already, cook your chicken. You can use either poached, grilled, or store-bought rotisserie chicken. Once cooked, shred the chicken into bite-sized pieces.
  2. Step 2: Combine the Salad Ingredients - In a large mixing bowl, combine the shredded chicken, halved grapes, chopped celery, Greek yogurt, and Dijon mustard. Season with salt and pepper to taste. Mix everything together until well combined.
  3. Step 3: Prepare the Tortillas - Lay out your tortillas on a clean surface or plate. If desired, warm them slightly in a microwave to make them more pliable, which will help with wrapping.
  4. Step 4: Assemble the Wrap - Place a couple of lettuce leaves on each tortilla. Spoon a generous amount of the chicken salad mixture onto the lettuce.
  5. Step 5: Wrap It Up - Fold in the sides of the tortilla and then roll it tightly from the bottom to the top. Make sure the filling is secure inside the wrap.
  6. Step 6: Slice and Serve - Slice the wrap in half diagonally and serve immediately. You can also wrap it in sandwich paper for an on-the-go meal!

Notes

  • Use rotisserie chicken for convenience.
  • Wrap tortillas in sandwich paper for easy transport.
  • Store leftover chicken salad in an airtight container for up to 3 days.
