Preparation Steps:
- Start by finely dicing the onion and mincing the garlic. These aromatics will add a depth of flavor to your chicken patties.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until they are translucent. Add the minced garlic and cook for an additional minute until fragrant. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the ground chicken, sautéed onion and garlic, beaten egg, milk, bread crumbs, grated parmesan cheese, chopped parsley, Italian seasoning, salt, black pepper, and crushed red pepper flakes. Mix until just combined, being careful not to overwork the meat.
- Using your hands, shape the chicken mixture into patties, about 1/2 inch thick. This recipe should yield around 4-6 patties, depending on your preferred size.
- In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chicken patties and cook for about 4-5 minutes on each side until golden brown and cooked through. Transfer the cooked patties to a baking dish.
- In a small saucepan, combine the marinara sauce and tomato paste. Heat over low heat until warmed through. Pour the sauce over the chicken patties in the baking dish.
- Sprinkle the shredded mozzarella cheese and additional grated parmesan cheese evenly over the sauce-covered patties.
- Preheat your oven to 375°F (190°C). Bake the chicken patties for about 20 minutes, or until the cheese is bubbly and lightly golden.
