Chicken and Broccoli Stir Fry

Ingredients
  

  • 1 lb boneless skinless chicken breast cut into 3/4" pieces
  • 2 Tbsp cooking oil (extra light olive oil works great)
  • 1 lb broccoli cut into florets (about 5 cups)
  • 1 small yellow onion sliced into strips
  • 1/2 lb white button mushrooms thickly sliced
  • 2/3 cup low sodium chicken broth
  • 3 Tbsp low sodium soy sauce (use Tamari for gluten-free)
  • 2 Tbsp light brown sugar packed (or honey to taste)
  • 1 Tbsp corn starch
  • 1 Tbsp sesame oil
  • 1 tsp fresh ginger peeled and grated
  • 1 tsp garlic (2 small cloves, grated)
  • 1/4 tsp black pepper plus more to season chicken

Method
 

  1. Start by cutting the chicken breast into bite-sized pieces, slicing the onion into strips, and chopping the broccoli into florets. Make sure to slice the mushrooms thickly to maintain their texture during cooking.
  2. In a medium bowl, add the chicken pieces and season with a pinch of black pepper. You can also add a tablespoon of soy sauce if you like. Let it marinate for about 10 minutes while you prepare the other ingredients.
  3. In a large skillet or wok, heat 1 tablespoon of cooking oil over medium-high heat. Once the oil is hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove the chicken from the pan and set aside.
  4. In the same skillet, add the remaining tablespoon of cooking oil. Add the sliced onion and cook for 2-3 minutes until softened. Then, add the broccoli florets and mushrooms. Stir fry for an additional 5 minutes until the vegetables are tender but still crisp.
  5. While the vegetables are cooking, whisk together the chicken broth, soy sauce, light brown sugar, corn starch, sesame oil, grated ginger, and grated garlic in a small bowl. This will be your sauce.
  6. Once the vegetables are cooked to your liking, return the chicken to the skillet. Pour the sauce over the chicken and vegetables and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats everything beautifully.
  7. Remove from heat and serve the Chicken and Broccoli Stir Fry over a bed of rice or noodles. Enjoy the colorful presentation and the tantalizing aromas!

Notes

  • For a vegetarian option, substitute chicken with tofu or tempeh.
  • Use coconut aminos instead of soy sauce for a soy-free alternative.
  • If you have leftovers, store them in an airtight container in the fridge for up to 3 days.
