Ingredients

  • 3/4 cup Unsalted Butter (at room temperature)
  • 1/2 cup Granulated Sugar
  • 1/2 cup Packed Light Brown Sugar
  • 1/4 cup Mild Molasses
  • 1 Large Egg
  • 2 1/3 cups All-Purpose Flour (sifted)
  • 2 teaspoons Baking Soda
  • 2 teaspoons Ground Ginger
  • 1 teaspoon Ground Cinnamon
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Ground Cloves
  • 1/4 teaspoon Freshly Ground Nutmeg
  • 3 ounces Good Quality Dark Chocolate (finely shaved or grated)

Equipment

  • Mixing bowls
  • Electric mixer
  • Baking sheet
  • Cookie scoop or spoon
  • Cooling rack

Method

  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, combine the unsalted butter, granulated sugar, and packed light brown sugar. Beat on medium speed until light and fluffy, about 2-3 minutes.
  3. Add the mild molasses and large egg to the mixture. Beat on low speed until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, kosher salt, ground cloves, and freshly ground nutmeg until well mixed.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Gently fold in the dark chocolate using a spatula until evenly distributed.
  7. Form the dough into balls (about 1.5 inches in diameter) and roll each in granulated sugar. Place on the prepared baking sheet.
  8. Bake for 10-12 minutes, or until edges are set but centers are still soft.
  9. Remove from the oven and cool on the baking sheet for 5 minutes before transferring to a cooling rack.
