  • 2 Tablespoons ground flaxseed
  • 6 Tablespoons butter *

  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips or other favorite add-ins

Method
 

  1. Start by lining your baking dish with parchment paper, allowing some excess to hang over the edges. This will make it easier to lift the bars out once they’re cooled.
  2. In a small saucepan over medium heat, combine the butter, honey, and brown sugar. Stir until the mixture is melted and smooth. Remove it from the heat and stir in the vanilla extract.
  3. In a large mixing bowl, combine the quick oats, crispy rice cereal, ground flaxseed, and any additional add-ins you desire. This could include nuts, seeds, or dried fruits.
  4. Pour the melted butter mixture into the bowl with the dry ingredients. Use a spatula to mix everything together until it's evenly coated.
  5. Gently fold in the mini chocolate chips or any other favorites you’ve chosen. Be careful not to over-mix, as you want to maintain the integrity of the add-ins.
  6. Transfer the mixture to your prepared baking dish. Use the spatula or your hands to press the mixture down firmly and evenly. This step is crucial for achieving chewy bars that hold together.
  7. Refrigerate the mixture for at least 2 hours to set. Once fully chilled, lift the bars out of the dish using the parchment paper. Cut them into squares or rectangles, depending on your preference.
