- Preheat your oven to 325°F (163°C).
- Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, wheat germ, light brown sugar, sunflower seeds, ground cinnamon, and kosher salt. Stir well.
- In a separate bowl, whisk together the light-flavored oil, honey, and pure vanilla extract until fully combined.
- Pour the wet mixture over the dry ingredients and mix together until well-coated.
- Gently fold in the whole raw almonds and unsweetened flaked coconut.
- Transfer the mixture onto the prepared baking sheet, spreading it out evenly.
- Bake the granola for about 25-30 minutes, stirring halfway through.
- Once golden brown, remove from the oven and let it cool for about 10 minutes before stirring in the dried cherries.
- Allow to cool completely and then break into clusters before storing in an airtight container.
