Ingredients
  

  • 500 g White Flour all-purpose flour works best
  • 80 g Butter unsalted
  • 150 g Sheep's Cheese or Cheddar choose your favorite cheese
  • 1 tsp Turmeric for color and warmth
  • 1 tsp Salt essential for flavor
  • 1 tsp Bicarbonate (Baking Soda) for leavening
  • 2 Medium Eggs for structure and moisture
  • 150 ml Yogurt plain for moisture
  • 1 Egg Egg (for egg wash) for a glossy finish
  • Grated Parmesan optional, for flavor

Method
 

  1. Preheat your oven to 200°C (390°F).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, whisk together the white flour, baking soda, salt, and turmeric.
  4. Cut the butter into cubes and work it into the flour mixture until it resembles coarse crumbs.
  5. Grate your cheese and fold it into the flour mixture.
  6. In a separate bowl, whisk together the eggs and yogurt until smooth.
  7. Pour the wet ingredients into the dry mixture and stir until just combined.
  8. Turn the dough onto a lightly floured surface and knead gently until it comes together.
  9. Pat the dough into a rough circle about 2-3 cm thick.
  10. Cut out scones and place them on the prepared baking sheet.
  11. Beat the additional egg and brush it over the tops of the scones.
  12. Bake for 15-20 minutes until golden brown.
  13. Let cool on a wire rack before serving.

Notes

  • Store in an airtight container for up to 2 days at room temperature.
  • Freeze wrapped scones for up to 3 months; reheat in the oven.
  • Experiment with different cheeses for unique flavors.
