Ingredients
  

For the Cookies:
  • 2 boxes Yellow, White, or Vanilla Cake Mix approximately 15 ounces each
  • 1 cup unsalted butter softened
  • 4 large eggs
  • 2 teaspoons vanilla extract
For the Frosting:
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tablespoon vanilla extract for frosting
  • 1 tablespoon heavy cream
  • as desired Food coloring and sprinkles for decorating

Method
 

Instructions:
  1. Step 1: Preheat the Oven: Preheat your oven to 350°F (175°C). This ensures that the cookies bake evenly.
  2. Step 2: Mix the Dough: In a large mixing bowl, combine the softened butter and the cake mix. Beat with an electric mixer on medium speed until well blended. Add in the eggs and vanilla extract, and continue mixing until the dough is smooth and well combined.
  3. Step 3: Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of cookie dough onto a parchment-lined baking sheet. Make sure to leave some space between each cookie, as they will spread while baking.
  4. Step 4: Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked, but they will firm up as they cool.
  5. Step 5: Cool the Cookies: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a cooling rack to cool completely.
  6. Step 6: Make the Frosting: While the cookies are cooling, prepare the frosting by beating the softened butter in a mixing bowl. Gradually add the powdered sugar, vanilla extract, and heavy cream. Mix until the frosting is smooth and creamy. If desired, add food coloring to achieve your preferred hue.
  7. Step 7: Decorate: Once the cookies are completely cooled, spread a generous amount of frosting on each cookie. Top with sprinkles or additional decorations as desired.
