  • 8 to 9 cups all-purpose flour
  • 2 envelopes instant yeast (about 4 1/2 teaspoons)
  • 1 cup granulated sugar
  • 4 teaspoons fine sea salt
  • 3 to 4 tablespoons minced fresh rosemary (optional)
  • 4 to 5 large garlic cloves (minced)
  • 1 cup milk
  • 1 cup water
  • 1 cup unsalted butter

Method
 

Instructions
  1. Begin by warming the milk and water in a small saucepan over low heat until it is warm to the touch but not boiling. Remove from heat and stir in the granulated sugar and instant yeast. Allow this mixture to sit for about 5 minutes until it becomes frothy.
  2. In a large mixing bowl, combine 6 cups of all-purpose flour, fine sea salt, minced garlic, and minced rosemary. Mix well to ensure that all the dry ingredients are evenly distributed.
  3. Once the yeast mixture is frothy, make a well in the center of the dry ingredients and pour in the warm milk mixture. Stir with a wooden spoon or spatula until combined. Gradually add more flour, 1 cup at a time, until a soft dough begins to form.
  4. Transfer the dough to a floured surface and knead for about 8-10 minutes, adding more flour as necessary to prevent sticking. The dough should be smooth and elastic when finished.
  5. Place the kneaded dough in a large greased bowl. Cover it with a kitchen towel and let it rise in a warm place until it doubles in size, about 1 to 1.5 hours.
  6. Once the dough has risen, punch it down to release any air bubbles. Turn it out onto a floured surface and divide it into small pieces, shaping each piece into a ball. Place the rolls on greased baking sheets, leaving space between each.
  7. Cover the rolls with a kitchen towel and let them rise again for about 30 minutes, or until they puff up.
  8. While the rolls are rising, preheat your oven to 375°F (190°C). This ensures that they will bake evenly once they are ready.
  9. Once the rolls have risen, place them in the preheated oven and bake for approximately 15-20 minutes, or until they are golden brown on top.
  10. Remove the rolls from the oven and let them cool for a few minutes on a wire rack. Serve warm, or if you wish to prepare them ahead of time, follow the storage instructions below.

  • Store these rolls in an airtight container at room temperature for up to 3 days.
