Ingredients
  

  • 4 pieces skinless salmon fillets (7 oz each)
  • 3 tablespoons light olive oil
  • 3 tablespoons lime juice (freshly squeezed)
  • 2 teaspoons lime zest
  • 3 tablespoons honey
  • 1 tablespoon minced garlic
  • 1 1/4 teaspoons salt (adjust to taste)
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 tablespoon chopped cilantro (optional)

Method
 

  1. In a mixing bowl, whisk together the light olive oil, lime juice, lime zest, honey, minced garlic, salt, black pepper, cumin, and coriander.
  2. Place the skinless salmon fillets in the bowl with the marinade, ensuring that each piece is well coated. Cover and let it marinate in the refrigerator for at least 15 minutes, or up to an hour.
  3. Preheat your broiler to high, positioning a rack in the upper third of the oven.
  4. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  5. Place the marinated salmon fillets on the prepared baking sheet and broil for about 6-8 minutes, or until cooked through.
  6. If desired, sprinkle with chopped cilantro and serve with your favorite sides.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For longer storage, freeze individual fillets wrapped tightly in plastic wrap.
  • Check for doneness using a meat thermometer; salmon should reach 145°F.
