Broccoli Tarts with Cheese

Ingredients
  

  • 2 1/2 cups chopped broccoli pieces fresh or frozen, chopped into bite-sized pieces
  • 1 cup grated cheddar cheese sharp or mild variety
  • 6 tablespoons coarsely-grated Parmesan cheese adds a nutty flavor
  • 8 eggs binding agent
  • 1 cup cottage cheese rinsed and drained
  • 2 teaspoons Spike seasoning or preferred all-purpose seasoning
  • fresh-ground black pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C) to ensure even baking.
  2. If using fresh broccoli, wash and chop it into small pieces. If using frozen, ensure it’s thawed and drained.
  3. In a large mixing bowl, combine the grated cheddar cheese and coarsely-grated Parmesan cheese. Set aside.
  4. In another bowl, whisk together the eggs and cottage cheese until smooth.
  5. Add the chopped broccoli to the egg and cottage cheese mixture. Stir in the cheese mixture, Spike seasoning, and black pepper. Mix well.
  6. Grease your tart pan or pie dish lightly, then pour the mixture into it, spreading it out evenly.
  7. Bake for 30-35 minutes, or until the top is set and lightly golden. A toothpick inserted should come out clean.
  8. Once baked, let the tart cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

  • These tarts can be made ahead and stored in the refrigerator for up to 4 days.
  • Freeze for up to 2 months; reheat in the oven after thawing.
  • Pair with a fresh salad or roasted vegetables for a complete meal.
