Ingredients
  

  • 1 cup broccoli florets and peeled stems fresh and vibrant
  • 3 tablespoons olive oil for cooking and brushing
  • 2 tablespoons lemon juice adds brightness
  • 2 tablespoons crushed almonds for crunch
  • 1 small garlic clove minced
  • Salt/Pepper to taste
  • Water as needed
  • 2 slices crusty bread hearty for the base
  • 2 ounces taleggio cheese creamy and melts beautifully
  • 2 fried eggs for topping
  • Chili flakes for spice
  • Parsley for garnish
  • Olive oil for drizzling

Method
 

  1. Start by washing your broccoli florets and peeled stems thoroughly. Roughly chop them into bite-sized pieces. In a frying pan, heat 2 tablespoons of olive oil over medium heat.
  2. Add the chopped broccoli and sliced shallots to the pan. Sauté them for about 5 minutes, stirring occasionally. If the broccoli starts to stick, add a splash of water to help with cooking.
  3. Minced the small garlic clove and add it to the pan along with salt and pepper to taste. Sauté for another minute until the garlic becomes fragrant.
  4. In a small bowl, mix the crushed almonds with the remaining tablespoon of olive oil and lemon juice. This will create a flavorful topping for your melt.
  5. While the broccoli is cooking, brush the slices of crusty bread with olive oil and place them under the broiler or in a toaster oven until golden and crispy.
  6. Once the bread is toasted, remove it from the oven. On each slice, pile high the sautéed broccoli mixture, then add slices of taleggio cheese on top.
  7. Return the assembled toast to the oven for a few minutes, just until the cheese is melted and bubbly.
  8. In a clean frying pan, add a little olive oil and fry the eggs to your desired doneness.
  9. Once the cheese has melted, remove the toast from the oven. Top each slice with a fried egg, a sprinkle of chili flakes, and freshly chopped parsley. Drizzle with a little more olive oil for extra flavor.

Notes

  • Feel free to use frozen broccoli if fresh is not available; just thaw and drain.
  • Experiment with different cheeses like Gruyère or mozzarella for a twist.
  • Store leftovers in an airtight container for up to 2 days; reheat for best results.
