Method

Instructions
  1. Step 1: Start by bringing a large pot of salted water to a rolling boil. Add your pasta and cook according to the package instructions until al dente. Reserve about ½ cup of the pasta water before draining the pasta.
  2. Step 2: While the pasta cooks, heat a skillet over medium heat. Add the walnuts and toast them for about 5 minutes, stirring frequently, until they are golden and fragrant.
  3. Step 3: In the same skillet, lower the heat and pour in the heavy cream. Allow it to simmer gently for a couple of minutes. Stir in the chopped fresh rosemary.
  4. Step 4: Add the room temperature blue cheese to the skillet, stirring until it melts and integrates into the cream, creating a smooth sauce.
  5. Step 5: Add the drained pasta to the skillet and toss well to coat it in the creamy blue cheese sauce.
  6. Step 6: Finally, sprinkle the toasted walnuts over the pasta and give it one last toss.
  7. Step 7: Transfer the Blue Cheese Pasta with Walnuts to a serving bowl and enjoy!

Notes

  • Let your blue cheese come to room temperature for the best flavor.
  • Substitute blue cheese with goat cheese or feta if preferred.
  • Add sautéed mushrooms for an earthier flavor profile.
