- Step 1: Prepare the Black Garlic. Peel the black garlic cloves and place them into your blender or food processor.
- Step 2: Blend the Bases. Add the two egg yolks and kosher salt to the blender with the black garlic. Blend until smooth.
- Step 3: Emulsify the Mixture. With the blender running, slowly drizzle in the olive oil until the mixture thickens.
- Step 4: Add the Lemon Juice. Incorporate the lemon juice and blend for an additional 10-15 seconds until creamy.
- Step 5: Taste and Adjust. Taste the mayonnaise and adjust salt or lemon juice as needed, blending again to combine.
- Step 6: Store and Chill. Transfer to a storage jar, seal, and refrigerate for at least 30 minutes before using.
