- Step 1: Prepare the Ingredients - Start by cooking the quinoa according to package instructions if you haven't done so already. Once cooked, allow it to cool. Also, shred the beets and dice the red onion.
- Step 2: Mash the Black Beans - In a mixing bowl, add the black beans. Using a fork or potato masher, gently mash the beans until they are partially broken down but still have some texture.
- Step 3: Combine All Ingredients - To the bowl with the mashed black beans, add the cooked quinoa, shredded beets, diced red onion, minced garlic, chili powder, smoked paprika, kosher salt, and black pepper. Drizzle the olive oil over the mixture. Stir everything together until well combined.
- Step 4: Form the Patties - Using your hands, take a portion of the mixture and shape it into patties, about 3 inches in diameter and ½ inch thick. Place the formed patties on a plate.
- Step 5: Cook the Burgers - Heat a skillet over medium heat and add a little olive oil to coat the bottom. Once the skillet is hot, carefully place the patties in the skillet. Cook for about 4-5 minutes per side, or until the burgers are golden brown and heated through.
