Preheat your oven to 350°F (175°C).
In a large mixing bowl, cream the butter and brown sugar until light and fluffy, about 2-3 minutes.
Add the egg and vanilla extract, mixing until well combined.
Gradually add the instant vanilla pudding mix, mixing until fully integrated.
In a separate bowl, whisk together the flour, baking soda, and salt. Slowly add to the wet ingredients.
Fold in the chocolate chips.
Scoop rounded tablespoons of dough onto a baking sheet and bake for 10-12 minutes.
Cool on the baking sheet for 5 minutes before transferring to a cooling rack.
