Course: Sauce
Cuisine: Italian

Ingredients

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 4 ounces cream cheese softened
  • 2 cups heavy whipping cream
  • 1 teaspoon Stone House Seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated mozzarella cheese

Equipment

  • Medium saucepan
  • Wooden spoon or whisk
  • Measuring cups and spoons
  • Grater

Method

  1. In a medium saucepan over medium heat, combine the butter and olive oil. Stir occasionally until the butter is fully melted and the mixture begins to bubble slightly.
  2. Add the cream cheese to the saucepan. Using a wooden spoon or whisk, stir until the cream cheese is fully incorporated and the mixture is smooth.
  3. Gradually add the heavy whipping cream to the pan. Continue to stir, ensuring that the cream cheese mixture is fully combined with the cream.
  4. Add the Stone House Seasoning to the saucepan. Stir well to combine.
  5. Reduce the heat to low, then gradually stir in the Parmesan cheese and mozzarella cheese. Continue to stir until both cheeses are melted and the sauce is creamy and smooth.
  6. Taste your sauce and adjust the seasoning if necessary.
  7. Once your sauce is beautifully creamy and well-seasoned, remove it from the heat. Serve it immediately over your favorite pasta.

Notes

  • For a healthier option, consider using half-and-half instead of heavy cream.
  • Don’t rush the melting process; allowing the cheeses to melt slowly will give you the best texture.
  • If the sauce thickens too much, whisk in a bit of reserved pasta cooking water to loosen it up.
