Ingredients
  

For the Crust:
  • 3 cups chocolate wafers or chocolate-covered digestive cookies
  • 1/2 cup unsalted butter melted
For the Filling:
  • 1 cup dulce de leche or caramel sauce
  • 2 bananas sliced
  • 1 1/2 cups heavy whipping cream chilled
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 oz chocolate (chips or chunks)

Method
 

Preparation Steps:
  1. In a mixing bowl, combine the chocolate wafers or chocolate-covered digestive cookies with the melted butter. Stir until the crumbs are evenly coated and resemble wet sand. Press the mixture firmly into the bottom and up the sides of the pie dish to create a crust. Place the crust in the refrigerator to set while you prepare the filling.
  2. Once the crust has set, remove it from the refrigerator. Pour the dulce de leche or caramel sauce into the crust, spreading it evenly across the bottom.
  3. Slice the bananas into thin rounds and lay them evenly over the dulce de leche layer.
  4. In a separate bowl, combine the chilled heavy whipping cream, powdered sugar, and vanilla extract. Whip the cream until soft peaks form.
  5. Spread the whipped cream over the bananas, creating a luscious layer. Use a spatula to smooth the top.
  6. Sprinkle the chocolate chips or chunks over the top of the whipped cream.
  7. Place the completed pie in the refrigerator for at least 30 minutes to allow it to set.

Notes

  • For best results, use ripe but firm bananas to avoid mushiness.
  • Always chill your mixing bowl and beaters before whipping cream for maximum fluffiness.
  • Don’t skip the chilling time; it makes a significant difference in texture.
