Ingredients
  

  • 1 1/2 cups white whole wheat flour or pastry flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter (at room temperature)
  • 1 cup sugar
  • 2 large eggs
  • 3 ripe bananas (mashed)
  • 2 tablespoons lemon juice
  • 2 teaspoons vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan with butter or line it with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then mix in the mashed bananas, lemon juice, and vanilla extract.
  6. Gradually add the dry mixture to the wet ingredients, mixing gently until just combined.
  7. Fold in the chocolate chips until evenly distributed.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake for 60-70 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.

Notes

  • For a gluten-free option, use a gluten-free flour blend.
  • To make it vegan, substitute eggs with flax eggs and use vegan butter.
  • Store in an airtight container at room temperature for up to 3 days.
