Ingredients
  

  • 1.5 pounds salmon of choice fresh or frozen, thawed if frozen
  • 4 tablespoons butter softened
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 0.5 cup parmesan cheese grated
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut four large pieces of aluminum foil, each large enough to wrap around individual portions of salmon.
  3. In a mixing bowl, combine the softened butter, lemon juice, olive oil, minced garlic, parmesan cheese, Italian seasoning, salt, and pepper. Mix until well blended and creamy.
  4. Place a piece of salmon in the center of each foil sheet. Generously spread the garlic butter mixture over each piece of salmon.
  5. Gather the edges of the foil and fold them over the salmon, creating a sealed packet.
  6. Arrange the foil packets on a baking sheet and place them in the preheated oven. Bake for 15-20 minutes, or until the salmon flakes easily with a fork.
  7. Carefully open the foil packets and sprinkle fresh parsley over the salmon before serving.

  • Consider marinating the salmon in the garlic butter mixture for 30 minutes for extra flavor.
  • Using fresh garlic adds a more potent flavor.
