Baked Oatmeal with Blueberries and Bananas

Ingredients
  

  • 2 medium ripe bananas sliced into 1/2" pieces
  • 1.5 cups blueberries fresh or frozen
  • 0.25 cup honey or maple syrup adjust to taste
  • 1 cup uncooked quick or old-fashioned oats
  • 0.25 cup chopped walnuts or pecans
  • 0.5 tsp baking powder
  • 0.75 tsp cinnamon
  • 1 pinch salt
  • 1 cup fat-free milk (or any milk you desire)
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the oats, baking powder, cinnamon, and salt. Stir until well mixed.
  3. In another bowl, whisk together the milk, egg, honey or maple syrup, and vanilla extract until fully combined.
  4. Add the sliced bananas and blueberries to the wet mixture, gently folding them in.
  5. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined.
  6. Fold in the chopped walnuts or pecans.
  7. Grease your 9x9-inch baking dish and pour the oatmeal mixture into it. Spread it out evenly.
  8. Place the baking dish in the preheated oven and bake for 30-35 minutes.
  9. Once baked, let it cool for a few minutes. Cut into squares and serve warm.

Notes

  • Customize with your favorite fruits or nuts.
  • Store in an airtight container in the fridge for up to five days.
  • Reheat in the microwave for 30-60 seconds for a quick breakfast.
