Ingredients

  • 2 pounds chicken wings Fresh or thawed
  • 1 teaspoon salt Adjust according to taste
  • 1 teaspoon pepper Freshly ground
  • ½ cup buffalo wing sauce Recommended: Frank’s RedHot
  • 4 tablespoons unsalted butter Melted

Equipment

  • Large bowl
  • Baking sheet
  • Wire Rack
  • Meat thermometer
  • Brush

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, rinse the chicken wings under cold water and pat them dry with paper towels.
  3. Add the salt and pepper to the bowl with the wings and toss to coat evenly.
  4. Place a wire rack on top of your baking sheet and arrange the seasoned wings in a single layer on the rack. Bake for about 40-45 minutes, turning halfway through.
  5. While the wings are baking, melt the unsalted butter in a small saucepan and stir in the buffalo wing sauce until well combined.
  6. Once the wings are finished baking and have reached an internal temperature of 165°F (74°C), remove them from the oven, place in a bowl, and toss with the buffalo sauce mixture.
  7. Return the coated wings to the oven for an additional 10 minutes for an extra crispy finish.
  8. Let the wings cool for a few minutes, then serve with your favorite dipping sauces.

Notes

  • Ensure wings are thoroughly dried before seasoning for optimal crispiness.
  • Avoid overcrowding the baking sheet to prevent steaming.
  • Let wings rest after baking to retain juiciness.
