Ingredients
  

For the Wings:
  • 2.5 pounds chicken wings (approximately 2 dozen)
  • 3 tablespoons extra virgin olive oil
  • 6 cloves garlic (smashed)
  • 1 tablespoon dried rosemary
  • 0.25 cup parsley (chopped)
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon black pepper
  • 2 teaspoons kosher salt
  • 2 tablespoons canola oil
  • 2 cups yellow onion (thinly sliced)
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley (chopped for garnish)

Method
 

Directions:
  1. Step 1: In a mixing bowl, combine the extra virgin olive oil, smashed garlic, dried rosemary, chopped parsley, fresh lemon juice, black pepper, and kosher salt. Whisk until well combined.
  2. Step 2: Place the chicken wings in a large bowl or a resealable plastic bag. Pour the marinade over the wings, ensuring they are well coated. Seal the bag or cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to overnight for maximum flavor.
  3. Step 3: While the wings are marinating, preheat your oven to 450°F (230°C). This high heat is key to achieving that crispy exterior.
  4. Step 4: In a skillet, heat the canola oil over medium heat. Add the sliced yellow onions, salt, and black pepper. Cook until the onions are soft and caramelized, about 10-15 minutes. Stir occasionally to prevent sticking.
  5. Step 5: Line the baking sheet with aluminum foil for easier cleanup. Spread the marinated wings in a single layer on the prepared baking sheet. Roast in the preheated oven for about 30-35 minutes, flipping halfway through, until the wings are golden brown and crispy.
  6. Step 6: Once the wings are done, remove them from the oven and let them rest for a few minutes. Serve them on a platter topped with the caramelized onions and sprinkle with additional chopped parsley for a fresh touch.

Notes

  • For a smoky flavor, consider finishing the wings on a grill if you have one available.
  • The longer you marinate the wings, the more flavorful they will be, so don’t rush this step if you have the time!
  • These wings can be marinated in advance and stored in the refrigerator for up to 24 hours before cooking.
