Method
 

  1. Start by preheating your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides. This will help you lift the bars out easily once they are set.
  2. In a large mixing bowl, combine the quick cooking oats, roasted unsalted almonds, rice krispie cereal, oat flour, salt, and cinnamon (if using). Stir until all the dry ingredients are evenly mixed.
  3. In a separate bowl, mix together the creamy almond butter, honey, and vanilla extract. Stir until smooth and well combined. The mixture should have a creamy consistency.
  4. Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to gently fold everything together until all the dry ingredients are coated. The mixture may be thick, but that’s okay!
  5. Transfer the mixture to the prepared baking pan. Using the back of the spatula or your hands, press the mixture down firmly and evenly. This is important to ensure your bars hold together after baking.
  6. Place the pan in the preheated oven and bake for about 20-25 minutes, or until the edges are golden brown. Keep an eye on them to avoid burning.
  7. Once baked, remove the pan from the oven and allow it to cool completely in the pan. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Place them on a cutting board and cut into squares or rectangles.

  • Pressing the mixture firmly into the pan is crucial for the bars to hold their shape.
  • Using roasted almonds enhances the flavor, but raw almonds can work if roasted beforehand.
