Gather all your ingredients. Ensure your rice is cooked and chilled; leftover rice works best as it’s drier and won’t clump together.
In a large mixing bowl, combine the chilled rice, frozen mixed vegetables, olive oil, salt, garlic powder, black pepper, and soy sauce. If you’re adding the beaten egg, mix it in as well. Stir everything together until well combined.
Preheat your air fryer to 380°F (193°C) for about 5 minutes to ensure even cooking.
Transfer the rice mixture to the air fryer basket, spreading it out evenly. Cook for 10-15 minutes, shaking the basket halfway through. Add a few extra minutes for crispier rice if desired.
Once cooked to your liking, remove from the air fryer and transfer to a serving dish. Garnish with sliced green onions and enjoy!
