Ingredients
  

  • 3 cups cooked and chilled rice
  • 1.5 cups frozen mixed vegetables (like peas, carrots, and corn)
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon black pepper
  • 2 tablespoons soy sauce
  • 1 large egg (beaten, optional)
  • 2 stalks green onions (sliced for garnish)

Method
 

  1. Gather all your ingredients. Ensure your rice is cooked and chilled; leftover rice works best as it’s drier and won’t clump together.
  2. In a large mixing bowl, combine the chilled rice, frozen mixed vegetables, olive oil, salt, garlic powder, black pepper, and soy sauce. If you’re adding the beaten egg, mix it in as well. Stir everything together until well combined.
  3. Preheat your air fryer to 380°F (193°C) for about 5 minutes to ensure even cooking.
  4. Transfer the rice mixture to the air fryer basket, spreading it out evenly. Cook for 10-15 minutes, shaking the basket halfway through. Add a few extra minutes for crispier rice if desired.
  5. Once cooked to your liking, remove from the air fryer and transfer to a serving dish. Garnish with sliced green onions and enjoy!

Notes

  • Use leftover rice for the best texture; freshly cooked rice can be mushy.
  • Don’t overcrowd the air fryer basket for optimal crispiness.
  • Adjust soy sauce to taste to avoid overly salty fried rice.
