Ingredients
  

  • 1 pound lean ground beef (or ground turkey for a lighter option)
  • 10 ounces Ro*Tel Diced Tomatoes & Green Chilies (or optional chunky salsa)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 2.5 cups Mexican blend cheese (shredded)

Method
 

  1. In a large skillet over medium heat, add the ground beef (or ground turkey). Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes. Drain any excess fat.
  2. Once the meat is fully cooked, stir in the can of Ro*Tel Diced Tomatoes & Green Chilies. If you're using chunky salsa, add that instead. Mix well to combine.
  3. Sprinkle in the chili powder and cumin. Stir to ensure the meat and tomatoes are evenly coated with the spices. Let it simmer for 2-3 minutes to allow the flavors to meld.
  4. Reduce the heat to low and gradually add the shredded Mexican blend cheese. Stir continuously until the cheese is melted and everything is creamy and delicious.
  5. Transfer the dip to an oven-safe dish if desired, or serve directly from the skillet. Pair with tortilla chips, fresh veggies, or anything else you love to dip!
