In a mixing bowl, add 1½ cups of peanut butter, ⅔ cup of your chosen flour (coconut, oat, or protein powder), and ⅓ cup of your liquid sweetener.
Using a spoon or spatula, mix all the ingredients until the mixture is well combined and forms a dough. It should be moist but not sticky.
Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Place each ball onto a lined baking sheet. You should get about 12-15 balls depending on the size.
Refrigerate the baking sheet for at least 30 minutes to allow the peanut butter balls to firm up.
If you’re feeling indulgent, melt the 3 oz of chocolate with 4 tsp of oil in a microwave-safe bowl, stirring until smooth. Drizzle over the chilled peanut butter balls before serving.
