Ingredients
  

  • 1.5 cups Peanut Butter creamy or crunchy, or a nut-free alternative like sunflower seed butter
  • cup Coconut Flour or Oat Flour or Protein Powder
  • cup Liquid Sweetener pure maple syrup, honey, or a keto-friendly syrup
  • 3 oz Chocolate optional, melted with 4 tsp of oil for drizzling

  • Measuring cups and spoons
  • Spoon or spatula
  • Baking sheet
  • Refrigerator

Method
 

  1. In a mixing bowl, add 1½ cups of peanut butter, ⅔ cup of your chosen flour (coconut, oat, or protein powder), and ⅓ cup of your liquid sweetener.
  2. Using a spoon or spatula, mix all the ingredients until the mixture is well combined and forms a dough. It should be moist but not sticky.
  3. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Place each ball onto a lined baking sheet. You should get about 12-15 balls depending on the size.
  4. Refrigerate the baking sheet for at least 30 minutes to allow the peanut butter balls to firm up.
  5. If you’re feeling indulgent, melt the 3 oz of chocolate with 4 tsp of oil in a microwave-safe bowl, stirring until smooth. Drizzle over the chilled peanut butter balls before serving.

Notes

  • For a nut-free option, use sunflower seed butter.
  • Store in an airtight container in the fridge for up to a week.
  • Freeze for longer storage; they last up to three months.
